1x 400g can black beans, drained and rinsed
2x eggs, medium size
5 tbsp sugar
a pinch of salt
2x tsp vanilla essence
1/4 C cocoa powder
1/3 C any types of oil
1/3 C dark chocolate chips
1/3 C walnuts, chopped
Preheat oven to 180ºC and line a 20cm square tin with baking paper.
Add beans, eggs, sugar, salt, vanilla essence and cocoa powder to a food processor and blend until smooth. Slowly add oil and process a few seconds more.
Stir in chocolate chips and walnuts. Pour into prepared tin and bake for 20 mins or until centre is set. Cool for 5 mins before turning out and cutting into small squares.
