Tuna Pasta Bake


Ingredients
  • 400g short pasta e.g. Penne, Macaroni

  • 1 onion or leek, chopped

  • 2 tbsp flour

  • 50g margarine

  • 2 cups trim milk

  • 1-2 cup grated cheese (reserve 1/2-1 cup for topping)

  • 400g canned tuna

  • 1 cup frozen corn

  • 1 cup frozen peas

  • 1/2 cup breadcrumbs

Method
  1. Preheat oven to 180 degree Celsius.

  2. Cook pasta according to package instructions.

  3. While pasta is cooking, heat oil in a large pan over medium-high heat. Cook onion (or leek) until soft - around 5 mins.

  4. Add margarine then stir in flour. Add 1/2 cup of milk and whisk. Gradually whisk in the rest of the milk until there are no lumps.

  5. Bring sauce to simmer and mix in 1 cup of grated cheese. Then add tuna, corn and peas.

  6. Drain pasta and stir into tuna mix.

  7. Spoon mixture into a large baking dish. Sprinkle the top with breadcrumbs and the remaining cheese.

  8. Bake for 5-10 mins until the top is golden.

  9. Enjoy!


Tips

You can substitute tuna with your choice of protein, e.g. shredded chicken, beans.
