400g short pasta e.g. Penne, Macaroni
1 onion or leek, chopped
2 tbsp flour
2 cups trim milk
1-2 cup grated cheese (reserve 1/2-1 cup for topping)
400g canned tuna
1 cup frozen corn
1 cup frozen peas
1/2 cup breadcrumbs
Preheat oven to 180 degree Celsius.
Cook pasta according to package instructions.
While pasta is cooking, heat oil in a large pan over medium-high heat. Cook onion (or leek) until soft - around 5 mins.
Add margarine then stir in flour. Add 1/2 cup of milk and whisk. Gradually whisk in the rest of the milk until there are no lumps.
Bring sauce to simmer and mix in 1 cup of grated cheese. Then add tuna, corn and peas.
Drain pasta and stir into tuna mix.
Spoon mixture into a large baking dish. Sprinkle the top with breadcrumbs and the remaining cheese.
Bake for 5-10 mins until the top is golden.
You can substitute tuna with your choice of protein, e.g. shredded chicken, beans.
