Rocket and Parmesan Salad

Ok, I admit it. I’ve never really been a fan of rocket. I’ve never really known how to use it other than as a substitute for lettuce or spinach in a sandwich. I also never really liked the bitterness or ‘peppery’ flavour as a leaf on it’s own – I found it overpowering.

Little did I know, I had been ignoring a classic combo that would make this easy to grow leaf my new fave! These days with the internet at our fingertips, it’s possible to turn the most undesired ingredient into an absolute winner.





Balsamic vinegar

Olive oil

Salt and pepper



Pretty much bung everything together in a bowl. Use a potato peeler to shave parmesan over the rocket leaves.

Drizzle with balsamic vinegar (about 1 tbsp per 2 big handfuls of rocket). Drizzle with about half a tablespoon of olive oil.

Throw in a pinch of salt and pepper.

Give it a mix and enjoy the taste explosion!
