Perfect for those get-out-of-bed and go sort of people. Prepare this muesli the night before (5 minutes!) and you’ll wake up to a fast, healthy, convenient breakfast. This recipe is super versatile – swap for different seeds, nuts and fruit as desired.
This breakfast is not only delicious, but is a nutritious choice. It has high-fibre oats to fill you (a low-GI carbohydrate), protein from milk and yoghurt, nuts and seeds for healthy fats and 1-2 serves of fruit for your day!

Serves: 4 people
Time: 5-10 minutes prepping, overnight soaking
Ingredients
2 cups rolled oats
1 cup milk (cow’s or alternative)
1-2 apples, grated
1.5 cups thawed frozen berries
¼ cup coconut flakes
1 cup plain yoghurt
¼ cup raw sunflower seeds
¼ cup sliced or whole almonds
Method
- At night – In a medium sized mixing bowl, stir together the oats, milk, grated apple and flaked/shredded coconut. Cover tightly with plastic wrap and chill overnight to allow oats to soften and absorb the milk.
- Put 1.5 cups of frozen berries into a small bowl, and place in the fridge to thaw
- The next morning – Add the yoghurt, sunflower seeds and the almonds. Mix well.
- Either sprinkle on top, or fold into the mixture the thawed out berries. Add any remaining juice from the bowl.
